Since this thread is back... Today was New Year's Day, and it's tradition in this area to have cabbage to bring luck and money to you in the new year. Really, many restaurants even offer this on New Year's Day here. Usually corned beef and cabbage or cabbage rolls. You're supposed to boil it with a 50 cent piece, but I don't. Anyway, I made cabbage soup, and that's what we had for dinner today and will also have tomorrow cuz I made a big pot. =) It's really simple and yummy. All you need is a pound of ground beef (I use veggie ground beef), 2 cans of diced tomatoes, beef broth (or veggie broth), 4 cups of water, 2 cans of kidney beans or 1 large can, and a head of cabbage all cut up. Just throw it all together (cook your ground beef first if you use real beef, of course), and cook it til the cabbage softens. I like to put shredded cheddar cheese on top and black pepper.

Kale is super-healthy for you! Like many dark green veggies, it's full of antioxidants and fiber, and in addition it can lower your cholesterol and your risk of cancer. This is from webmd:
One cup of kale contains 36 calories, 5 grams of fiber, and 15% of the daily requirement of calcium and vitamin B6 (pyridoxine), 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus.

Oh my goodness!! Kale is super healthy, too?? I just started eating raw spinach daily a few days ago. Have you all seen what all is in that?? It's all listed on the bag in the fridge, but wow. I have kale, too, so now I'm going to have to eat that often as well!! It is indeed delicious. I was thinking of making a Jonsi and Alex green smoothie to use up the rest of it that I have in the fridge left from Christmas. I put some in a pasta salad I made. And like Jonsi, I totally love parsley.

it is very high in vegetable protein, iron, and all the other vitamins listed above. it's versatile as fuck and can be roasted, dehydrated, eaten raw, blended, steamed, shredded - basically you can work it into anything.tonight I had salad with papaya dressing, leftover vegan calzone, quinoa salad, roasted potatoes and squash.

^ I can make you feel a lot better about simple meals! We had a spinach salad with bits of leftover chicken in it. I think I may have sprinkled some dried cranberries and parmesan cheese on top. Hey, it *was* new years day!

Medzi, you ever come to Boston, I will concentrate on making you a vegan meal to remember. I actually became vegan for a month so that I could learn to cook as such, so that guests at my parties could have good tasting vegan food.

I had indonesian peanut rice noodles...we went out tonight with good friends. The conversation was better than the food which is how I will let that stand.
Medizin, I am not vegan or really even a vegetarian any more but I have been vegetarian for the past fourteen years minus the last six weeks. I have been vegan on and off. Tried raw, macrobiotic, this that and the other. The one thing I'll always be, due to health reasons and not trendiness is gluten free. You name the restrictive diet though, and I can cook you something for it since I think I've been through just about all of them! We eat 97% vegetarian and of the 97% of that we are 70% vegan. If you (or any other board folk) ever make it out to Colorado The offer also stands for dinner of any sort of dietary variety...

made myself a summerhotwinter drink : 4 bloodoranges, teaspoon of agave syrup, lots of ground pepper, some star anise (hm. steranijs), a drop of genever (quite a few drops actually), made as hot as one can muster, sprinkled with some cinnamon.
i feel as knackered as before, but it sure lifted my spirits!

That sound wonderful! I hope you're feeling better soon! And yes, good eye, that was a pineapple and mozzarella pizza. I also put spinach on my half :) my husband and I have been vegetarian for 8ish years, and I probably eat about 40% vegan. I would like to do more, however, and plan on incorporating more vegan and raw foodstuffs starting this week.

Oh my gosh Milo!! Cheese enchiladas are like my most favorite Mexican thing ever!! So delish!! Tonight - making meatballs with gravy and noodles for the meat-eaters of the family. The gravy is in a package and contains no meat products, so I'll probably just have the noodles and gravy. And baked potatoes...
